Sauteed Asparagus Salad

I was starving for lunch today but wasn’t in the mood to make anything complicated.  I also had a bunch of asparagus sitting in the fridge that I had been ignoring for the past few days.  I decided to combine my usual salad with a bunch of sauteed asparagus.  I realized while eating my lunch was how much I missed that warm salad taste that I remember from eating grilled chicken or shrimp over a salad.  I seriously forgot what that tasted like until today.  I will definitely add warm veggies to my salads in the future.

Directions: Saute asparagus along with 1 chopped shallot and 2 cloves of garlic.  Add olive oil and red wine vinegar. Salt and pepper to taste.  Add 1 diced tomato.  Enjoy!
