Collard Greens Wrap with Cashew Awesomeness

Cheers for today being almost over!  I am ready for tomorrow to be a little more relaxed and calm.

I am actually pretty darn proud that I got out of bed at 5am when my alarm starting blaring.  My first instinct was to reset my alarm to 6:30am and skip out on the gym.  But then I thought about Cool Runnings! I read on Kelly’s site the other day that one of her mantra’s is I see PRIDE, I see POWER, I see a BAD ASS MOTHER who don’t take no crap off of nobody!”

I haven’t seen that movie in ages. Classic.

Moral of the story, I made it to the gym and did 3 miles on the treadmill and lots of weights.  My days are always better when I can start them off with a workout.

I made a green juice when I was home for lunch today.  I also set aside some cashews in a mug of water so that they could soak before dinner.  For supper, I made this:

Can I just say, O-M-G.  This was so good.  I am starting to realize that I love cashew ravioli, cashew salad, and cashew everything!

I combined the following in Mr. Magic Bullet:

  • handful of soaked cashews (about a cup)
  • 4 sun dried tomatoes, chopped
  • 1 clove of garlic, minced
  • dash of basil
  • drizzle of extra virgin olive oil
  • drizzle of almond milk

I have a secret to confess.  Ready?  Here it is: I have never eaten collard greens.  Never.  I don’t know how I have gone my entire life without eating them.  I do not discriminate when it comes to vegetables (or anything, really) and I like to think that I have tried most veggies that are available in the grocery store.  Why have I always passed over the lovely green goodness in the form of collard greens?  I know that will never happen again!

I am acutally really pumped for the gym tomorrow morning.  Yeah for Cool Runnings!

    yay! Congratz for gettin up and hittin the gym!

    I have never tried collard greens before either! Whhhhhhhuttttttsup with that. I must change this.

    Awesome job getting up and getting to the gym. I never workout in the a.m. because I’m a wuss.

    I’ve never tried collard green either but they look so pretty on your plate!
