Wow it was go great to read in the comments that I wasn’t the only one who had never eaten collard greens. I am new to living in the south and I felt like such a phony. But not anymore!
Another day and another green juice for breakfast.

I try to make two servings of juice at a time so I can freeze one and save it for the next day. My juice for today and tomorrow consisted of 4 leaves of kale, handful of collard green leaves, 3 big carrots, 3 small lemons, 1 bunch of celery, and 1 green apple. So good.
I made a salad for lunch that included only 4 ingredients –how easy is that!
- Romaine lettuce
- Sliced carrots
- Avocado
- Dulse

Dulse is very salt and chewy– I had to take the bag away from my desk because I could munch on it all day like a bag of candy. Dulse is a sea vegetable that is high in iodine and B12. Gena from Choosing Raw answered a question last month about iodine specifically — I also learn a lot from her!

I made a dressing that matched the saltiness by combining agave syrup and apple cinder vinegar. This dressing was one of the sweetest I have made in a while. It tasted like dessert!

Are you a dulse fan? I am learning to love the stuff. I have not eaten any dulse since I made my everything salad earlier this month. It is definitely an acquired taste. But worth learning to love!
