Everything Salad

Working from home means one heck of a lunch!  I didn’t eat a ton of veggies yesterday so my body was craving them today.  I also didn’t have any kale to make my morning green juice, that means that I was really wanting vegetables.  I was going to make guacamole but my avocado wasn’t ripe yet (bummer), instead I made a salad of everything that I could find in my fridge.

I had romaine lettuce (of course!)….

…. broccoli

…. green bell peppers and grape tomatoes with balsamic vinaigrette

…. random dressing (garlic, cinnamon, olive oil, red wine vinegar, sea salt, pepper)

You’ll have to use your imagination to put all of these pictures together to get a visual of how my plate looked — I forgot to take a picture of the whole salad — sorry about that :)

Happy Monday!

I had a big salad for lunch today too. Yours looks great. I have never been able to find dulse though, and I’m kind of scared of it haha.
