Today is just flying by before my eyes. I finally went to the DMV and had my car registered in Kentucky and I got my Kentucky license. I should have done this in June, when I moved, but life gets in the way sometimes. I am so grateful that my boss lets us take every other Friday off (we work an extra hour Monday through Thursday and bank 8 hours); it would have been a mess if I tried to do all of that during my lunch hour. And they didn’t make me take a written test! Thank goodness, I hate tests. I can drive but I can’t take a test on driving!
After the DMV, I went to Kroger and Good Foods. I picked up kale, better carrots (more on that tomorrow), lemons, and an avocado. I made a yummy green juice as usual — I really should start taking pics of that — next time, I swear. I also made a big salad.
Where has butter lettuce been all of my life? I have used butter lettuce as a wrap but never chopped in an actual salad. How crazy?

It was nice to have a crunchy romaine lettuce with a soft butter lettuce.

My dressing was simple: oil and vinegar. Salt and pepper too, of course.

I don’t usually eat bars anymore but when I do, I am a total Lara fan. They are dairy-free, soy-free, vegan, peanut-free, raw, and aweseome! I am going to Indianapolis tonight with the Roomie to visit our friend for the weekend. I picked up a few bars to curb my hunger during the 3 hour car ride. I am actually proud of myself for putting back the banana and apple bars just to try something new. I am usually bad about finding a flavor that I like and then never branching out to try the other scary flavors — I like my safe flavors. I haven’t had the following bars yet:

I bought them in Kroger. When I went to our local co-op afterward, I noticed that they were 20 cents cheaper -way to go Good Foods! Shopping at chain grocery stores doesn’t always mean cheaper prices.

I love the Lara bars too and always favour them. They do cost a little more but as you said they’re a lot more nutritious.
I love butter lettuce! It’s my fave.
