Warm Zucchini and Tomato Salad

I just had a wonderful, spur-of-the-moment dinner.  I was planning to make my usual raw zucchini with red sauce but I didn’t want raw.  I wanted a warm meal.  I didn’t exactly cook anything; I simply heated the zucchini and tomatoes lightly.

I used goat milk butter for the first time.

I added the butter and peeled zucchini to a pan.

I barely cooked the zucchini.  I let it get warm and then took it off the heat.  I used the same pan and added a roughly chopped tomato.  I added a dash of Italian seasoning.  And of course, a clove of garlic.

    Mmm, I’ve been living on sauteed zucchini and summer squash for like the past month. It’s particularly nice with the sweetness of tomatoes. I want to try goat’s milk butter!
