Today was just one of those days where I was hungry all morning. I made my usual green juice of kale, carrots, celery and lemon but that did hold off the hungry for very long. I just had to have an early lunch. I usually try to wait until 11:30 or noon but it was a little before 11am when I was finished making my lunch.
It had been a while since I had a cashew salad so I made that for lunch.

In Mr. Magic Bullet I combined:
- 3/4 cup of cashews
- 1 huge clove of garlic
- 3 chopped halved sun-dried tomatoes
- splash red wine vinegar
- splash almond milk
- dash of dried basil leaves
I use almond milk to make the blending easy (you can use olive oil, water, other milks, real red wine!).

I like that the red wine vinegar made the cashew salad took pink and not white. Much more colorful! I also drizzled a little agave syrup on the cashew salad.

I think I went a little heavy when I was pouring the red wine vinegar and I needed something to sweeten up my salad — it had too much of a kick to it. Agave syrup sure did the trick!
This was one of those meals where I was sad when it ended. I was hungry and this salad hit the spot. I could have made a swimming pool filled with this salad and I would have just kept eating and eating and eating and …..
i’ve never had cashew salad but it sounds incredible!!
I have some mornings when I just can’t stop the hunger. Nothing seems to fill me.

Yum, that cashew salad has tons of things I love in it. I am obsessed with vinegar, I could almost drink it. Kind of wierd, haha.
