I seriously can’t get enough of cashew filling in collard greens. I had this for lunch on Wednesday and again today. I have fallen in love with cashew wraps! (PS these pics aren’t great, the sun hasn’t been out all week and apartment lighting is awful).

I decided to have raw zucchini and tomatoes too! It was sort of an Italian feel.
My cashew filling included:
- handful of soaked cashews
- 1 clove minced garlic
- 4 chopped sun dried tomatoes
- tablespoon of almond milk (used to blend – add more if necessary)
- dash of dried basil
- drizzle of olive oil
- drizzle of balsamic vinaigrette

I had a piece of my favorite Dark Chocolate. Instead of tea or coffee as my afternoon pick-me-up, I have a little piece of chocolate. It is like Halloween everyday!

This by far my favorite chocolate ever. I don’t know what Rapunzel does but they sure do an awesome job! Unfortunately, it is hard to find. I have to go to our local co-op because Fresh Market and Whole Foods don’t carry it.
