The Return of Guacamole Wednesday

At the beginning of the summer I fell in love.  And his name was Avocado.

I was addicted to making guacamole a few weeks ago.  I am now back into that addiction.

I decided to make lettuce wraps with guacamole, bell peppers and grape tomatoes for lunch today.

My guacamole included:

  • 1 avocado
  • grape tomatoes cut in half
  • chopped red bell pepper
  • chopped orange bell pepper
  • chopped yellow bell pepper
  • tablespoon lemon juice
  • minced garlic
  • salt and pepper

Guac Wednesday

This morning I packed my suitcases to go to my parents’ house for Thanksgiving week.  I am driving to Charlotte as soon as I leave work tomorrow.  The drive should be 6.5 hours but there was a rock slide in the Smokey Mountains and the detour will add another hour of driving time (major bummer!).  I downloaded new music last night and I plan to get a book on CD at the library tonight.  Any book suggestions? The last time I drove home I listened to Augusten Burroughs’ memoirs on CD.  Good music, lack of traffic, and nice weather are necessities on long car trips.  I have made this drive a bunch of times but I start to go a little car-crazy at hour 4 — I debate turning back but I have already driven half way and I have to go on.  I plan to pack a green juice, vegetables, fruit, nuts, and seeds as snacks on for the long drive.  How do you prepare for long car trips?

    I eat guacamole DAILY, so I’m loving this post especially, haha.

    Books = I’m a big fan of Stephen King. Read ‘em!

    Long car trip preparation = remind myself that I WILL get to the destination soon enough ;)

    I love guacamole! It’s great with just about everything!

    For long road trips I just view it as relaxation time. I always make sure I have my ipod car connector or listen to sirius :)

    I’ve been in love with avocados and his more glamorous cousin guacamole for as long as I can remember. There is nothing they can’t make even more delicious. I frequently put sliced avocado on vegan buttered toast in the morning…with lots of hot sauce of course! Great photos!

    Someone yesterday told me that Julia Child’s “My Life in France” is fantastic as an audio book. Maybe you’d enjoy listening to that for the ride??

    Love guac! Your lunch looks fantastic. If The Time Traveler’s Wife is on tape it might be a great one. Kind of lighter reading so you’ll get the jist of it while still focusing on driving, but a little deeper than your typical love story.

    mmm love that picture it is so pretty! preparing for long car rides?? make sure I have plenty of snacks!, dramamine (just in case!) ipod is loaded with songs (if I am not driving) the book on cd is a great idea!!

    Guacamole is, by far, one of my all time favorite foods. I could eat it anytime, any day. Love your inclusion of garlic in the recipe- must add a nice kick!
