Hope you all have been enjoying you week so far. I feel like I am getting back in the grove after the holiday/new year break. Tonight’s dinner was something new for me. I made zucchini and broccoli soup.

Zucchini and Broccoli Soup — 2 servings
1 zucchini, roughly chopped
1 cup broccoli
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1/2 avocado
1 teaspoon fresh dill seed
1/2 cup water
dash of salt and pepper
Combine all ingredients in a blender and blend until smooth. I ate this raw but I think it would have been better if I had heated it on the stove. I am starting to love uncooked soups but now that it is cold outside, warm soup belly is a necessity.
