I didn’t really feel like going through all the trouble of making a guacamole. Putting everything in a bowl and mushing with a fork just seemed like a huge bother at lunch today. Instead, I used all of the guacamole ingredients but made a salad.
The salad included romaine lettuce, avocado, and a vine ripe tomato.
